Pizza toppings of choice ( I like, cheese, tomato and more cheese)
1) Pour all your ingredients into a large bowl and either with a spoon, your hands or a dough hook,
mix into a shaggy dough. Pop a cloth over the top and leave for 10+hrs in a cosy corner
(do this in morning for evening pizza, evening for lunch pizza)
2. scoop the dough out onto a floury surface and divide into 2-4 pieces, shape into tight rounds and leave to rest for 30 mins. Preheat your oven to 250 grill.
3. Flatten the dough into thin discs, heat up a large frying pan on a medium-high heat and lower the dough into the pan, spread with tomato passata and after 5 minutes slide into the oven, cook for 5 minutes then add your cheese and cook for a further 3 until golden and crisp.
