1. Pour all your ingredients into a large bowl and either with a spoon, your hands or a dough
hook, mix into a shaggy dough. Pop a cloth over the top and leave for 10+hrs in a cosy corner.
2. Lightly flour your work surface, scoop out the dough and like a sleeping bag, roll into a log.
Slip into a non-stick baking tin and prove for 1-2 hrs. Preheat the oven to 200c.
3. Bake for 40 mins until golden brown, brush with a little water (this makes it shiny) then leave to cool on a rack for 30 mins before cutting thick slices and slathering with butter!
